Ingredients
- 2 Duck breasts
- 1 Avocado
- 1 Small carrot
- Small bunch of cilantro, mint
- 1/2 Red onion
- 1/3 Continental cucumber
- 1 Sleeve soba noodles
- 1/4 cup yuzu and ponzu dressing
Instructions
Prep all veg first thinly slicing, pick herbs, boil noodles and place into an ice bath, scorch duck fat and place fat side down in a cold pan, heat up pan and let fat render out, once skin is crispy flip over for 3 minutes. remove from heat and wrap in foil and rest. toss salad in dressing, assemble bowl, slice duck, assemble and enjoy.
